Chicken Zucchini Casserole

This is one of my family’s favorites ~ we had it at my friend Jen’s house and she was sweet enough to share her recipe now I will share it here on my blog (-:

6 cups fresh zucchini cubed

three cans of all white chicken drained (sounds gross its not I promise!)

one box of chicken Stove Top stuffing  (leave a little off to the side to top it off)

one cup of sour cream and half a stick of butter

Mix it all up in a casserole dish top with the stuffing you set aside and cook at 350degrees for approximately 35 to 45 minutes or until brown check center to make sure its cooked through if you question if its done….Enjoy its so good!

Because of this recipe Pyper and I are going to grow a garden this year we are so excited, my friends Laura and Debbie are going to buy supplies Friday.  SO  EXCITED! zucchini

  1. I can’t wait for the zucchini to come in this year so I can try this! It sounds yummy!
    When we go get supplies don’t get too much zucchini because I ALWAYS get more than I can use from the farmers market csa. I still have some in the freezer!

  2. I miss vegetable gardening so much. We had a lovely four-square garden at our last house. This house has a nice sunny front yard, but this neighborhood homeowners assn is against gardens. I figure it would be hard to hide that if it’s in the front. 🙂 Back has too many trees (and deer.) I’m going to love reading about your garden’s progress!!

    1. Thanks! We have a troubled yard too so we have to make planting boxes. When I say we I mean Chad haha…too bad we didn’t live closer I would happily share my garden with you (-:
